Refreshing and frosty

A tasty dessert is a must-have after a nice meal. And, since it is the norm to feast on the main course, not every palate is up for a heavy, creamy dessert or a warm, bready dish.  Yet there will always be a little room for a morsel that is light, refreshing and tangy. If you want to be good to yourself and your guests after a nutritious or hearty meal, and would like to surprise them with a refreshing, frosty little something, why not try a sorbet? And if using SecoSan water to make it, you are guaranteed a surprising freshness. 

Ingredients (serves 4):
1 cl Cointreau or Grand Marnier
2 cl Absolut vodka
75 ml SecoSan water
175 ml fresh lemon juice
1 egg white
⅟2 untreated lemon
100 g granulated sugar


Method:
Heat the sugar and the grated lemon peel in the SecoSan water until the sugar dissolves. Mix the lemon juice with the Cointreau or Grand Marnier and add. Allow the liquid to cool and place in the freezer for half an hour. Beat the egg white till soft peaks form, and blend it with the chilled lemon-liqueur mixture. The sorbet now needs to be frozen for around three hours.

Tip: While freezing, the sorbet must be whisked every half-hour so that it becomes smooth. Serve this tangy, refreshing dessert in chic cocktail bowls.
